Mama’s Chocolate Pound Cake
Today would have been my Mama’s 67th birthday. She was known for many things; being kind and considerate, shopping and cooking come to mind off the top of my head. Her chocolate pound cake was incredible and goes perfect with a big glass of milk. So in honor of her, I made one yesterday and decided to share the recipe with all of you.
Pound cake is a southern staple and comes in many varieties and flavors. I have shared two other pound cake recipes on here before that are tried and true and loved by all. But, this chocolate one is one that always stirs memories of my Mama, Sunday lunch after church and family fussing over the crumbs that fall off it; because that is the best part.
Why Is It Called Pound Cake?
Even though southerners claim pound cake as distinctly from the south, it is really dates back to northern Europe. But since a lot of people settled here, we are gonna still claim it to be a southern thing. I am sure we have added our own twists over the years! In a traditional pound cake the ingredients all measured a pound-a pound of flour, sugar, eggs and butter. Super healthy, I tell ya. Haha!
This chocolate pound cake uses cocoa powder to get the chocolate flavor and of course it has eggs and butter. I know a lot of people don’t like added salt, but in this cake, I highly recommend salted butter. Otherwise, it is a little flat, in my opinion. You don’t have to if you are watching your intake, but it does taste better with it.
Precious Memories
Even though my Mama has been gone for over two years, not a single day goes by that I don’t think of her. No matter what anyone says, grief feels like a wave to me. Sometimes it is gentle and easy to think about the good days I shared with Mama. But other days, it is like I am in the ocean during a hurricane. On those days, I tend to do things that are therapeutic and remind me of her the most. That is why I made this chocolate pound cake yesterday. Tonight I am gonna have a piece with some vanilla ice cream and some chocolate drizzle added and celebrate the day my Mama was born. Because without her, I know I wouldn’t be even close to the person I am today. And I still have a long way to go to be half the woman she was in her life. Happy Birthday, Mama! I miss you and love you.
Mama's Chocolate Pound Cake
Ingredients
- 2 sticks salted butter
- 1/2 cup shortening
- 3 cups sugar
- 6 large eggs
- 3 cups plain all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cocoa powder
- 1 cup milk
- 2 tablespoons vanilla
Instructions
- Cream butter, sugar and shortening. Add eggs one at a time, beating well. Mix flour, cocoa, salt and baking powder. Blend in flour mixture and milk, alternating, starting and ending with flour. Add vanilla. Bake at 350 for 1 hour and 20 minutes or until toothpick comes out clean.
